The Treatment: I treat my tap water with Potassium metabisulphite (preferred to sodium metabisulphite – which also works). I use 1ml (1/8 teaspoon) per 40L (10 usg) - more is NOT needed, nor adviseable. I stir it well and also aerate it for 30 minutes - though 5 minutes should be more than adequate.

Get PricePotassium metabisulfite is incompatible with strong acids, water, and most common metals. It reacts with nitrites and sodium nitrate at room temperature, which occasionally results in the formation of flame. The reaction may be explosive if water is present. Potassium metabisulfite liberates SO2 with acids.
Get PricePotassium metabisulphite (K 2 S 2 O 5) is adding for sulphate of grape mash (crushing of grapes), must and wine.To some extent the process is an analogue of sulphate with sulphurous acid. It is easily soluble in hot water and more difficult soluble in must.
Get Price1/16 tsp is equal to 1 Campden tablet and you only need 1/4 tab to treat 5 gallons. So I weighed out 1 tsp of potassium metabisulphite for a starting point. I took several measurements and came up with 66 grains. After you scale down the dosage, it comes to about 1 grain for 5 gallons. I just set the scale for 1.3 grains to treat 6 gallons.
Get PriceThe only thing I use potassium metabisulfite for in brewing is the dechlorination of my tap water. I use k-meta in winemaking for several purposes: To stop the naturally occurring wild yeast and bacteria on the grapes immediately after crushing. After sulfiting the must to ~40ppm, I let it rest for about a day before pitching my cultured yeast.
Get PricePotassium Bisulfite is also used in stronger doses with water as an equipment sanitizer. You can use it to sanitize fermenting vessels, hydrometers, wine bottles, hoses or any other glass, metal, plastic or wood that comes into contact with your wine.
